I love it when I have all of the ingredients to put together a quick dessert, especially when I have a sweet tooth! And by all of the ingredients, I mean 3! I put together these little brownie bites in less than 10 minutes. They satisfied my sweet tooth and they were so good!
1 c. walnuts
1c. raisins (or dates, I have made them both ways and they are both equally good.)
1/4 c. raw cacao powder
pure maple syrup
Process the 1 c. of walnuts in a food processor until a pretty fine consistency is reached. Next, add the raisins and process again until well blended. Finally, add the cacao powder and process until well incorporated. Taste the mixture and decide now if you would like to add any sweetener. My dear daughter wanted hers a little sweeter so I added a bit of pure maple syrup to her mixture. The cacao powder can be intense but I love the taste of dark chocolate and the raisins are sweet enough for me.
I used a tablespoon to scoop out the dough and rolled them into golf ball sized balls. For an extra touch I rolled each ball in coconut flakes. I love coconut!! Get creative! I would like to try nut butter added to the mix the next time I make them!
