I have been doing a raw vegan challenge for exactly 2 weeks, today. I have one more week to go! This is my second raw vegan challenge. The first time I was 42 days raw leading up to my 42nd birthday!
Why raw you ask?
Well, eating raw food keeps the nutrients in tact as well as gives your body some time off from digesting big cooked meals. Food digestion takes a lot of work and can leave you feeling sluggish and tired. So eating raw foods, primarily fruits and green leafy veggies leaves you feeling light, bright and full of energy!
I love experimenting in the kitchen and have a great time learning new ways to prepare uncooked food and in doing so, I came across a recipe for overnight oats, that I adapted and made my own.
It really doesn’t get much easier than this!
Grab your favorite mason jar, your ingredients and let’s do this!
Mix all of the ingredients in your jar and cover. Place in the fridge overnight.
1 c. oats
1 c. plant based milk
1 chopped apple
1 TBSP sweetener (such as pure maple syrup)
Dash of cinnamon
The next morning you take out your jar, mix it all about and add chopped walnuts, your favorite fruit (sliced bananas, strawberries and/or blueberries) and shredded coconut (all optional of course)!
