Better Than Tuna Salad

This is a super easy recipe and is refreshing on hot days! It’s perfect because there is no heating up the kitchen for this one! 

The star flavor in this recipe is the addition of dill. If you don’t have fresh dill or any dill on hand, this recipe is tasty without it. However, if you can get some dill, add it! 

Dill may be best known for its role in the dill pickle but it offers so much more to dishes with its slightly sweet, slightly lemony flavors.

And a plus, it’s rich in antioxidants and is a good source of vitamin C, magnesium, and vitamin A. It’s a win-win.

Better Than Tuna Salad 

1 can garbanzo beans – drained and rinsed

¼ cup red onions – chopped

¼ cup celery – chopped

¼ cup red bell pepper – chopped

3 tablespoons relish or finely chopped pickles

1 tablespoon capers 

1 tablespoon fresh dill – chopped

1 tablespoon vegan mayo

2 teaspoons mustard 

salt and pepper to taste

 

1.         Pulse the garbanzo beans in your food process or mash with the back of a fork.  Set aside. 

 

2.         In a large bowl add the remaining ingredients. 

 

3.         Add the garbanzo beans to the mayo mixture and mix well.

 

Serve on toasted bread with all the sandwich fixings, with crackers, or on romaine lettuce leaves.
